Heaven on the Half Shell: the science, history and culture behind the oyster in the Pacific Northwest

Join us for Tide Talk, in partnership with Sea Grant Washington and Willapa-Grays Harbor Estuary Collaborative.

Presenter: Samantha Larson, Heaven on the Half Shell co-author and communications lead at Washington Sea Grant

Published in partnership with University of Washington Press, the second edition of Heaven on the Half Shell offers a thoroughly researched and richly illustrated history of the significant events that tell the story of the Pacific Northwest’s most beloved bivalve, the oyster. Samantha will share favorite passages and highlights from putting the book together with her co-authors, MaryAnn Wagner and the late David George Gordon. Samantha has written extensively about science topics for publications such as National Geographic, Outside Magazine and High Country News. She has been part of the Washington Sea Grant communications team since 2017.

This conversation will be held, rain or shine, on the back lawn at Tokeland Hotel.

Chainsaws, beer garden and live music – sounds like a perfect summer day! What could be better? How about adding a handmade art festival? Yes! Even better.

What started  over 15 years as an annual carver party, Jeffro Uitto, a popular local wood artist & carver, now hosts a giant party that everyone is invited to. Woodfest has a local friendly vibe that extends to two days of live music, food, local and visiting arts and yes, live chainsaw carving by some of the most talented carvers in the region.

This event has grown in popularity and traffic congestion can be an issue, therefore parking at the Tokeland Hotel is reserved for guests and handicap visitors only. Please use the Shoalwater Bay Casino shuttle to/from the event as regular parking is limited.

The Wandering Goose at Tokeland Hotel Guest Chef Series: Taichi Kitamura

Summer opens with something spectacular.

On Sunday, June 7, The Wandering Goose hosts an intimate guest chef pop-up dinner with Taichi Kitamura of Sushi Kappo Tamura, one of the Pacific Northwest's most respected Japanese restaurants.

About the Chef

Born and raised in Kyoto, Tamura moved to Seattle at 16 and spent years working in the city’s top Japanese restaurants before opening Chiso in 2001. He now owns Sushi Kappa Tamura on Seattle’s Eastlake. A three-time James Beard Award nominee and Beat Bobby Flay winner, he sources hyper-locally, tends a rooftop garden with Seattle Urban Farm Company, and builds lasting relationships with regional producers. When he’s not in the kitchen, he’s likely on a river - Kitamura is an avid fly fisherman, and that same attentiveness to water and season shows up in everything he puts on the plate. His relationship to fish is the foundation of everything on the table.

The Menu

For this special evening, Kitamura will present a multi-course menu inspired by early summer on the coast, highlighting regional seafood and the wild ingredients of the Pacific Northwest.

Make a Night of It

We have rooms available, make a long weekend out of it.

Jackero - LIVE

Jackero live at Tokeland Hotel
June 6

Jackero is an old-time and folk project composed of sisters Ellie and Annie Davis. Growing up in Olympia, Washington, the sisters began fiddle lessons at the age of four and have been playing, singing, and performing together ever since. While rooted in Appalachian old-time music tradition, the duo explores the intersection of traditional music and original songwriting, bringing a fresh sound to old music through a combination of fiddle, banjo, guitar, and close vocal harmonies. Their band name comes from the traditional ballad often written as "Jack-A-Roe," famously performed by folk heroes like Jean Ritchie and Pete Seeger, and reflects their deep respect and reverence for traditional Appalachian music and its rich storytelling traditions.

The Wandering Goose at Tokeland Hotel Guest Chef Series: Mia Ponzi Hamacher

On Sunday, May 17, The Wandering Goose hosts an intimate guest chef pop-up dinner with Mia Ponzi Hamacher of Sosta House in Oregon’s Willamette Valley.

About the Chef

Mia Ponzi Hamacher cooks seasonally informed food shaped by French technique and Italian tradition. Her years in New York City kitchens, under Daniel Boulud, Daniela Soto-Innes, and Ignacio Mattos, including time at Forsythia (Michelin Guide) are what laid the foundation for food that is precise without being stiff, and generous without being showy. She's also the chef behind Sosta House, a bed and breakfast on the grounds of the historic Ponzi Winery estate, where her family has been making wine in Oregon's wine country for three generations.

Read our conversation with chef and innkeeper Mia Ponzi Hamacher of Sosta House on her grandmother's kitchen, cooking with seasonal honesty, and what draws her back to Tokeland.

The Menu

For this special evening, Ponzi Hamacher will present a multi-course menu inspired by mid-spring on the coast —highlighting regional seafood, local farms, and the wild ingredients of the Pacific Northwest.

Oysterfest

A festival for oysters

Our second annual Oysterfest is back on the back lawn.

Spend the afternoon with live music, local beer, and as many oysters as you can manage. Shoalwater Seafood will be shucking Toke Point and BayStone oysters to order. Hama Hama Company is joining us this year.

Fort George Brewery out of Astoria is hosting a tap takeover. They are pouring:
Pilsner - 5% ABV - a crisp, clean, adventurous Pilsner
Weather Systems - 6% ABV - Saison with lemon zest
DDH Vortex - 7.2% ABV - doubled dry hopped to produce a fiercer, bolder, wilder version of this NW favorite

Finnriver Farm & Cidery is pouring:

Tideline (6.5% ABV) - golden russet apples with a touch of native rosehip & grand fir (semi-dry)

Honey Meadow (6.5% ABV) - infused with chamomile & burdock root, sweetened by honey (semi-sweet)

Bloom (6.5% ABV) - apple-forward with an infusion of blueberry (semi-sweet)

Simple Goodness is mixing seasonal drinks and selling their Simple Goodness syrups and their book Drink Your Garden. In addition, they’re mixing:

  • Lilac Spritz N/A - lilac, botanicals, lemon, seltzer

  • HeartBeet N/A - beet shrub, orange bitters, herb, lemon, seltzer

  • Lilac and Lead cocktail - lilac, gin, lemon, seltzer

  • Bull’s Blood and Bourbon - beet shrub, bourbon, twist

  • High Tide Highball - herbs, lemon, vodka, seltzer

The Oly Mountain Boys are playing live.

Beyond the raw bar, we’ll have oyster gumbo, grilled oysters, and shucking demonstrations throughout the afternoon. Finally, for the young and young-at-heart, we’ll have oyster shell painting and face painting all afternoon.

Tickets

Presale tickets are $40 + tax and service charge, and include entry and a dozen raw oysters.

Walk-in admission is the same price, without the oysters.

Additional raw oysters are $2 each on-site. Oyster gumbo and grilled oysters are available separately.

If you’d like to stay for dinner, make a separate reservation in the dining room — the full Wandering Goose menu will be running alongside the event, available only in the dining room.

The Wandering Goose at Tokeland Hotel Guest Chef Series: Brendan McGill

A new series. The first dinner.

On Sunday, April 19, we welcome Brendan McGill — chef, farmer, and founder of Bainbridge Island's Hitchcock Restaurant Group — for an intimate, one-night-only dinner on the Washington coast.

About the Chef

Brendan McGill grew up in Fairbanks, Alaska with a childhood shaped by wilderness, seasons, and working with his hands. He moved to Seattle to cook, and a decade later opened Hitchcock on Bainbridge Island, building what would become the Hitchcock Restaurant Group: multiple restaurants, an organic farm, and a fermentation program rooted in the Pacific Northwest's fields, forests, and waters. A James Beard Semifinalist and Food & Wine People's Best New Chef, McGill has spent his career going deeper into where food comes from, and seafood has always been at the center of that work.

The Menu

For this special evening, McGill will present a multi-course menu inspired by spring on the coast —highlighting regional seafood, local farms, and the wild ingredients of the Pacific Northwest.
