A new series. The first dinner.
On Sunday, April 19, we welcome Brendan McGill — chef, farmer, and founder of Bainbridge Island's Hitchcock Restaurant Group — for an intimate, one-night-only dinner on the Washington coast.
About the Chef
Brendan McGill grew up in Fairbanks, Alaska with a childhood shaped by wilderness, seasons, and working with his hands. He moved to Seattle to cook, and a decade later opened Hitchcock on Bainbridge Island, building what would become the Hitchcock Restaurant Group: multiple restaurants, an organic farm, and a fermentation program rooted in the Pacific Northwest's fields, forests, and waters. A James Beard Semifinalist and Food & Wine People's Best New Chef, McGill has spent his career going deeper into where food comes from, and seafood has always been at the center of that work.
The Menu
For this special evening, McGill will present a multi-course menu inspired by spring on the coast —highlighting regional seafood, local farms, and the wild ingredients of the Pacific Northwest.
